Ultrasonic food cutter is a kind of equipment which uses wave energy to cut and process. Its biggest characteristic is cutting without edge. Or rather, without cutting edge in the traditional sense. Traditional cutting is the use of a sharp edge of the knife, pressure on the material to be cut. The pressure is concentrated at the cutting edge, and the pressure is very large, exceeding the shear strength of the material to be cut. The molecular bond of the material is pulled apart and it is cut off. The ultrasonic cutting effect is not good for soft and elastic materials, but more difficult for viscous materials.
